The landscape of the calcareous mountain of the Valnerina consisting of cultivated fields stolen from the wood is interspersed with large woods, in which some small rounded emplacements without grass, the Truffle Grounds, can be seen. This underground mushroom grows mostly in symbiosis with the roots of Oak-hornbeam, Holm oaks, Turkey oaks, fir trees and pine trees. In the Valnerina there are three different species of truffle: the Prized Black Truffle from Norcia (Tuber Melanosporum Vittadini) which is picked from 1^st December to 31^st March; the Summer Truffle (Tuber Aestivum) also known as “scorzone” which, as the name indicates, is found from 1^st June to 31^st August; and finally The Black Winter Truffle (Tuber Uncinatum) which is harvested from 1st October to 31^st  August.
